CUPB students exhibited their cookery skills and prepared millet recipes in Food Carnival-Vyanjan Path 2023

Students from 27 states and 7 union territories of India and international students of the Central University of Punjab exhibited their cookery and catering skills in the “CUPB Food Carnival – Vyanjan Path 2023”, held on Monday at the university campus by preparing famous cuisines of their respective states and authentic Indian flavours under one roof. The programme was organized under the patronage of Vice-Chancellor Prof. Raghavendra P. Tiwari, as a part of the 14th Foundation Day Celebrations under the focal theme of the International Year of Millet 2023. The Chief Guest of this programme was Prof. (Dr.) Buta Singh Sidhu, Vice Chancellor, Maharaja Ranjit Singh Punjab Technical University, Bathinda.

At the beginning, Vice Chancellor Prof. R.P. Tiwari, along with Chief Guest Prof. Buta Singh, inaugurated the programme. Prof. Anil Mantha, Programme Coordinator, informed the dignitaries that in this food carnival, a total of 50 teams (comprising students and staff members) put up their food stalls and prepared regional, traditional, and festival cuisines from all across the country. He further stated that 26 teams out of 50 especially prepare innovative millet recipes to promote consumption of millets. Prof. B.K. Garg, Controller of Examinations and Registrar (I/c) and university officials also visited this carnival.

On this occasion, CUPB students served authentic cuisines of various states of our country, like Punjab, Jammu & Kashmir, Uttar Pradesh, Andhra Pradesh, Kerala, Bihar, West Bengal, Orissa, Maharashtra, West Bengal, Tamil Nadu, Manipur, Assam, Kerala, Sikkim, Assam, Telangana, Rajasthan, etc. The Chief Guest, along with jury members, visited every stall and tasted mouth-watering delicacies freshly prepared by the students and staff members. They appreciated the participants for preparing delicious food.

Some of the interesting cuisines prepared from millets and presented in this food carnival were Ragi Ladoo,  Papdi Chaat, Bajra Roti, Samai Upma, Kuttu Pakora, Raagi Churma, Paniyaram, Millet Porridge, Millet Bhelpuri, Khangani Kheer, Millet Pan Cake, Bajra Churma, Banagi Shake, Millet Kodambam, Millet Dosa, Kakra Peetha,  Idli, Momos, Jowar Shikanji etc.

In this food carnival, students served authentic Indian and lip-smacking snacks such as Idli Sambar, Litti Chokha, Muri Ghonto, Sticky Rice Roti, Pav Bhaji, Paneer Tikka, Dosa, Tandoori Chicken, Jhal Muri, Malpua, Chilla, Ram Laddoo, Veggie Momos, Lucknowi Dum Biryani, Alu Kabli, Sinju, and more. This carnival also includes some unique and mouth-watering desserts and beverages like Sabudana Kheer, Caramel Tort, Aam Panna, Gajar Pak, Payakh, Kashmiri Kahwa, Black Rice Tea, Grape Mojito, Lassi, Jal Jeera, Avil Milk, and many more.

In addition to the food stalls set up by students, 11 stalls were set up by food processing units from the Malwa region, who also displayed their products at the Swadeshi Mela held in conjunction with the carnival.
